Today I processed 5 dozen ears of organic sweet corn I got from my friend and fellow Decatur Farmers Market vendor Steve Miller.
I carefully removed the shucks and separated the silks for drying. Corn silk is a valuable medicine. It is recommended for any type of urinary tract irritation including bladder and urinary tract infections. It is administered in both tea and tincture form.
I cut the corn kernels from the cob, saving the cobs to be turned into corn cob jelly by master jelly maker Robin.
I blanched the kernels for 5 minutes in boiling water, cooled them in an ice water bath and put them into1 quart freezer bags. We now have 5 quarts of corn freezing for eating this winter.
